Cajun Chicken Alfredo with Broccoli Recipe
This was super easy and very tasty. The Cajun seasoning really added a nice zip!! Made this for dinner. Family loved. Definitely a keeper!!!
YOU’LL NEED :
– Salt
– 1 pound penne or other small pasta
– 2 cups broccoli florets
– 1 pound boneless, skinless chicken breast cutlets
– 2-3 tablespoons Cajun seasoning (see notes)
– 2 tablespoons olive oil
– 2 tablespoons butter
– 3 cloves of minced garlic
– 1/2 cup of dry white wine
– 2 cups of heavy cream
– 2 8 ounces cups of shredded Wisconsin parmesan cheese
– Salt and pepper

INSTRUCTIONS :
1. Heat oven to 200°F then bring 4 quarts salted water to boil in large pot.
2. Now add pasta and cook for 9 minutes, or until al dente. And please drain pasta, reserving cooking water then set pasta aside.
3. Return cooking water to boil. Add broccoli and boil for about 2 minutes, or until tender and bright green then plunge directly into bowl of ice water. Drain and set aside.
4. Meanwhile, sprinkle both sides of chicken generously with Cajun seasoning.
5. Heat oil in large skillet until shimmering then in single layer, arrange chicken and sauté, flipping once, until temperature on internal thermometer reaches 155°F, about 5 minutes per side. Once done, be sure remove from skillet, cover with foil and transfer to oven to keep warm.
6. Next wipe skillet and return to stove then melt butter over medium-high heat and heat until foaming. Stir in garlic and sauté for 30 seconds, or until fragrant.
7. Using paper towel, whisk in wine; bring to simmer and simmer for 2 minutes, or until sauce has reduced by half.
8. Whisk in cream and simmer for 2 minutes, or until slightly thickened. Fold in parmesan cheese. Season with salt and pepper.
9. When finished, add reserved pasta to skillet and gently toss to coat. Arrange broccoli over pasta; top with chicken and garnish with additional parmesan cheese. Serve immediately.
COOK NOTES :
To make your own Cajun Seasoning: Combine together 1 tablespoon of garlic powder, 1 tablespoon of Italian seasoning, 1 tablespoon of paprika, 1 tablespoon of salt, 1/2 tablespoon of black pepper, 1/2 tablespoon of cayenne pepper, 1/2 tablespoon of dried thyme and 1/2 tablespoon of onion powder.
You can cook the pasta in advance, refrigerate and refresh in hot water just before serving to get a head start. You can blanch and shock the broccoli in ice water in advance; just store in refrigerator in cold water. The Cajun seasoning can be made anytime.
