####SIKI####
DIRECTIONS :
#Day 1:
- Make your starter: Stir yeast into warm water. Let sit for 10 minutes.
- In a 2 Qt container, whisk together sugar and flour (I always use a bowl). Whisk in milk and carefully stir the corners becuase the flour will get clumpy and stuck if you’re not careful.
- Stir the yeast mixture into the flour mixture then please cover loosely and store on the counter.
#Days 2-4 :
- Stir the mixture once per day.
#Day 5:
- Feed the mixture: Stir together 1 cup each sugar, flour, and milk into the starter, making sure to cover loosely and store on the counter.
#Days 6-9:
- Stir the mixture once per day.
#Day 10:
- Feed the mixture: Stir together 1 cup each sugar, flour, and milk into the starter, making sure to cover loosely and store on the counter.
- Next, be sure to remove 1 cup of starter to use in the Amish Friendship Bread Recipe according to directions below then remove 2 cups of starter and give 1 cup each to two friends, with the recipe below attached.
- You can give the remaining cup of starter to a third friend, or you can seal and freeze this 1 cup to use in the future. Alternately, continue the cycle of - friendship bread. And please cover your starter loosely and store at room temperature since you have it. Then you should start with “Day 2” directions above tomorrow (day 11) and keep it going.
#Friendship Bread Recipe:
- First, preheat your oven to 325°F and grease two 4×8” or 9×5” loaf pans with butter or shortening. Then directely sprinkle a bit of sugar in the pan and “sugar” it just like you would flour a pan. Or, you can simply spray with cooking spray, but do not sugar the pans if using cooking spray.
- In a medium bowl, whisk together baking soda, baking powder, salt, 1 teaspoon cinnamon, and flour; set aside.
- Then using a wooden spoon or spatula, stir together starter, oil, and 1 cup sugar. Now, you should stir in eggs, 1 at a time, then stir in vanilla and when done fold in dry ingredients gently. If using chocolate chips or nuts, please stir in.
- Divide batter between two loaf pans and mix remaining 4 teaspoons sugar and 1 teaspoon cinnamon then sprinkle on top of loaves.
- Finally, bake until a toothpick comes out clean, about 25-35 minutes, making sure to cool before removing from pan.
